A totally satisfying semi healthy dessert. This is your favorite cookie and cake all wrapped up into one wonderful treat! Great for the office or your next potluck function.
- 1 stick of butter (softened)
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 egg
- 1/2 teaspoon vanilla
- 3/4 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 1/2 cup oats (quick or regular)
- 1 1/2 raisins
- 6 oz (half bag) chocolate chips
- 1/4 cup chopped walnuts
The Prep Work:
Set out butter to soften. Place egg in small bowl of lukewarm water to bring to room temp. Set up your mixer. Combine flour, baking soda, cinnamon, salt and oaks in small bowl and set aside.
Once butter is softened combine butter, brown sugar and sugar into mixing bowl and cream with mixer. Don’t rush. Add the egg and vanilla. Continue mixing. When well mixed and smooth, add your flour/oatmeal mixture and continue mixing. Either with mixer of by hand. It will be very thick.
Fold in the raisins, chocolate chips and walnuts. Then transfer mixture to an ungreased 9 x 9 inch baking pan. You will need to use your hands or spatula to press down.
Bake in 350 oven for 30 minutes. Remove and let cool. Then cut into desired piece sizes. Would be great served warm with scoop of vanilla ice cream as well.
