Sausage Pasta Medley

This  hits all your taste buds.  So colorful and healthy.  An entire meal in a bowl that will leave you satisfied and happy.

I like colorful meals.  And I remember reading once that the more colorful your plate of food, the healthier.  This dish was also one of those made up dishes.  And here is how it happened.

Let me know if you have every done this.  I made my kitchen rounds not knowing what to prepare for dinner.  I looked in the pantry, in the frig and stared into the freezer until my face chilled.  Many years ago there was a show on the Food Network called Door Knockers hosted by Robin Leach.  He would come to your home and make a 5 course dinner with whatever you had on hand.

I loved that show and still play it out in my house.

So here was my initial inspiration.

Then I rounded up the rest of the crowd while I was cooking my pasta.

The Ingredients

The really cool thing about this dish  is that you do not necessarily need to add meat.  But I did.  I am a big user of what I have on hand type of gal, so I used three of the sausage links.

I partially thawed them, then squeezed them out in chunks from the casings.

And then cooked them in the skillet.

When the pasta was cooked I transferred to a colander and reused the same pan to saute my peppers, garlic and a little onion for a couple of minutes.

Then I just dumped the whole bag of veggies in the saucepan, covered with a lid and let cook on medium low heat until veggies were thawed and heated.


At this point I had a few minutes and decided to make a refreshing glass of lemonade.

What I really liked about this bag of veggies is that it had chickpeas, kidney beans and white beans mix in with the carrots, broccoli and beans.

Once the veggies were heated, I simply dumped the veggies into the colander on top of the pasta.

Next I melted the butter in the saucepan and added the lemon juice.  Once melted transferred the veggies and pasta back into the pan and just mixed it all up.

And then it all came together.  Into the serving bowls it went.

Added the sausage and topped with fresh basil and a sprinkle of parmesan cheese.

 Sausage and Pasta Medley

  • 3 Sausage Links
  • 1/2 box pasta of your choice
  • 1 bag mix veggies
  • one clove garlic
  • 2 peppers, diced, optional
  • 3 tablespoons lemon juice
  • 3 tablespoons butter
  • Fresh basil
  • parma cheese
  • salt and pepper to taste

    I have to agree, it does look great. I usually leave it in the casing, brown them up and cut them diagonal, and put a little brown to the insides as well.
